TWST: Would you begin with a few highlights of the history of Rare Hospitality and a picture of the main things you're doing right now?
Mr. Hickey: This is our 25th anniversary year. The company began in 1981, when the first LongHorn Steakhouse in Atlanta opened. Subsequent to that, we merged with The Bugaboo Creek Steak House and Capital Grille concepts in 1996 to become Rare Hospitality. Today we have over 300 restaurants featuring 246 LongHorns, 31 Bugaboo Creeks and 23 Capital Grilles.

TWST: Would you explain the differences in the concepts of these three?
Mr. Hickey: The LongHorn Steakhouse concept is a casual dining steakhouse with a classic western influence, and attentive and friendly service staff, and a $16 check average. Bugaboo Creek is a Rocky Mountain lodge concept with a warm rustic d‚cor, highly knowledgeable servers, featuring a broader menu with more comfort food than LongHorn. Capital Grille is a top scale, best of class steakhouse, and features a classic upscale steakhouse ambience, personalized service and operates in a number of major metropolitan areas. It features hand crafted mahogany, leather furnishings and a relaxed elegance. The menu has hand- cut dry-aged steaks, live Maine lobsters, an award-winning wine list and much more.
